A big source for german war crimes (mostly against US air crews) are the Dachau Trial documents.

I don't believe a centralised database exists, except for possible files at the National Archives in Kew. The Dachau Trials were different because they were conducted completely by the Americans under their own power, and for crimes against their own soldiers. It wasn't part of the Nuremberg trials and so the other powers were not involved.
I believe some of the files dealing with the Stalag Luft III murders also cover some of the other investigations carried out by the RAF, the Judge Advocates office and the FO:
